Puree #3: Roasted Pumpkin Puree

INGREDIENTS One pie pumpkin 1/2 cup of raw honey 1 cup water Hand blender RECIPE Cut the pumpkin in half and clean the seeds Brush with generous amount of olive/coconut Sprinkle with freshly ground cinnamon (Click here for how to make ground cinnamon at home) Put on rack and fill the bottom with 1-2 cups of water Bake in preheated oven at 350F (175C) for 45mins to 1 hour Scoop it, add 1/2 cup of honey Puree with a hand blender Use in pancakes up to a week and freeze the rest to add to future pancakes and waffles!
