INGREDIENTS
- One pie pumpkin
- 1/2 cup of raw honey
- 1 cup water
- Hand blender
RECIPE
- Cut the pumpkin in half and clean the seeds
- Brush with generous amount of olive/coconut
- Sprinkle with freshly ground cinnamon (Click here for how to make ground cinnamon at home)
- Put on rack and fill the bottom with 1-2 cups of water
- Bake in preheated oven at 350F (175C) for 45mins to 1 hour
- Scoop it, add 1/2 cup of honey
- Puree with a hand blender
- Use in pancakes up to a week and freeze the rest to add to future pancakes and waffles!
