Puree #3: Roasted Pumpkin Puree



  • One pie pumpkin
  • 1/2 cup of raw honey
  • 1 cup water
  • Hand blender


  • Cut the pumpkin in half and clean the seeds
  • Brush with generous amount of olive/coconut
  • Sprinkle with freshly ground cinnamon (Click here for how to make ground cinnamon at home)
  • Put on rack and fill the bottom with 1-2 cups of water
  • Bake in preheated oven at 350F (175C) for 45mins to 1 hour
  • Scoop it, add 1/2 cup of honey
  • Puree with a hand blender
  • Use in pancakes up to a week and freeze the rest to add to future pancakes and waffles!
