Baked Garlic Chicken & Potatoes

My Review

The chicken skin turned out so crispy and wonderful with a nice salt and peppery flavor. I didnt detect too much garlic or anything else, really, it was just simply good chicken and potatoes with some onions.

Ingredients Youll Need

  • 6 to 8 bone-in, skin-on chicken thighs
  • 1 lb (450g) potatoes, peeled quartered
  • 1 red onion, quartered
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons minced garlic powder
  • teaspoon hot cayenne chili powder
  • 2 tablespoons chopped fresh scallion
  • Kosher salt and freshly ground pepper, to taste

My Review

You could definitely taste the garlic in this one, and mixed with the honey? Oh my. It was so dang yummy! The salmon was cooked to a flaky, tender perfection and every inch was covered with the lovely sauce. I personally wouldnt call it spicy but, Im pretty sure my tongue is immune to such a small amount of hot sauce so, do beware of that if you make this.

We served it with roasted asparagus and Earth Balance buttered noodles

Ingredients Youll Need

  • 12 oz (350g) salmon fillets, cut into 2-3 strips
  • 1/4 cup(60ml)honey
  • 4cloves garlic, minced
  • 2 tablespoons whole-grain mustard
  • 1 tablespoon soysauce
  • 1 teaspoon apple cider vinegar or 1 tablespoon limejuice
  • 1 tablespoon olive oil
  • 1 tablespoon hot sauce of your choice
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon choppedcilantro
  • 1 lime, sliced into wedges

My Review

Pork chops arent my favorite, I usually find them dry and chewy but, boyfriend loves them so, I will eat them once in awhile for him. However, this turned out super tasty! The meat was actually juicy and the pesto was better than any jarred kind Ive tried. It was extremely savory, almost buttery, with a small sour bite. Mm, mm!!

We served it with steamed broccoli and Annies Homegrown Cheddar Flavor Vegan Mac

  • 2 tablespoons olive oil
  • 1 cup fresh flat-leaf parsley leaves, plus more for serving
  • 1teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 small shallots, peeled and root ends trimmed
