Easy Banana Bread

Ive been using this banana bread recipe for a while now, so Im not sure where it came from. Might have been adapted from simplyrecipes.com. I like its easy method and the fact that it always comes out tasting great. My daughter loves to help me out with this because it can be prepared in 1 bowl without a mixer.

Ingredients

  • 2 ripe bananas
  • 1/3 cup melted butter
  • 1 tsp baking soda
  • cup brown sugar or honey
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 1 cups plain/all-purpose flour

Method

  1. Preheat oven to 180deg C
  2. In a large mixing bowl, mash the ripe bananas until soft and smooth.
  3. Add the melted butter, baking soda, salt, and vanilla, and stir well.
  4. Mix in the flour
  5. Feel free to add any chocolate chips, nuts or raisins at this point.
  6. Pour batter into a buttered loaf tin and bake for 45-50 minutes or until cooked through (I usually insert a kebab stick to the centre and if it comes out clean it means its cooked)
  7. Remove bread from oven and from pan and allow to stand for at least 10 minutes or until cool, before slicing
