Recipe: Coffee Cardamom Honey Bundt Cake

It’s been another fulfilling weekend. I’ve been baking for some private orders, and baking for the fun of it. This bundt cake was made for the latter reason. What I love about a bundt – aside from its name, is that it looks pretty without even trying. While I primarily favour the humble loaf tin for baking, I occasionally take the effort to butter and flour a bundt tin for the sole purpose of being able to extract a pretty looking cake that doesn’t require anything else to beautify it. Perfection in simplicity.

With coffee, ground cardamom and honey in the pantry, what better than to put them together into a cake and create a party in the mouth! This is a pretty straightforward recipe that only needs you to have a clean mixing bowl, a whisk, and an arm to do the work. No mixer needed!

Coffee Cardamom Honey Bundt Cake

220g all-purpose flour
75g brown sugar
1 teaspoon cocoa powder
3/4 teaspoon baking powder
1/2 tsp baking soda
a pinch of salt
2 teaspoons of ground cardamom 
130 ml oil
2 eggs
150 g of honey 
40 ml of strong espresso coffee + 1 tsp ground coffee

  1. Preheat oven to 170 deg C. Butter and flour bundt cake tin. Set aside.
  2. Mix flour, brown sugar, cocoa powder, baking powder, baking soda, salt and ground cardamom together in a clean bowl.
  3. Make a well in the dry ingredients and add in oil, eggs, honey and espresso. Whisk together until just incorporated. 
  4. Pour mixture into prepared tin and bake for 45min until springy to touch and skewer inserted comes out clean. 
  5. Allow to cool for 15min before removing cake from tin.

Florian and I had some bonding time with Pearl and YJ at Saturday’s brunch. We went to Bearded Bella where food was yummy and prices were typical of most cafes in Singapore – on the higher side. Can’t complain since I chose it. Haha.

Even though Pearl and I started off being best friends from Secondary school, I love that I got to know YJ because y’know, best friend’s husband. And now, Florian has come to fall in love with both of them too!

Pearl and I used to laugh and imagine that we would get married, become neighbours, and have our kids grow up together, maybe marry each other. Lol. Well, we’ve got the ‘get married’ part right down pat. The neighbour part is a little bit of a stretch since I know Florian finds their area a bit too far out from his workplace, but I still harbour thoughts of our kids growing up together, maybe marrying each other.

This is Florian with his Crab Cold Capellini which he enjoyed. It was really delicious I have to say. Can’t say that the sweet chunks of crabs didn’t help!

I was too engrossed digging into my order of Canada Bay Field Day consisting of Seared Scallops, Butternut Squash, Charred Broccoli, Baby Corn and Watercress Rocket Salad. More scallops would have been welcomed but perhaps that’s just me being greedy.

Pearl had Pistachio-crusted Salmon with Rosti (lovely luscious salmon… <3) and YJ, the Scrambled Eggs with Sourdough.

From the highs of the weekend, I am now feeling rather low. I woke up today and saw the date – November 4. If we had gotten through hospitalisation, and pushed the pregnancy as far as it could go with the cholestasis, we would be having three little lives out in the world today. Our triplets would be here. I know that God tells us not to concentrate on the ‘what ifs‘. Rather, we ought to focus on the ‘what is‘.

What is, is that our babies are long in heaven; that we will never forget them; that we will always love them. 

What is, is that Florian and I are still clinging onto each other; moving forward together; looking ahead together. 

What is, is that we have to continue trusting in God’s plan; believing that His plans and purposes for us are always good; that we are blessed and will continue to be.
