Nailing the Basics: Nutritious Breakfast Foods

As they say, breakfast is the most important meal of the day. There is nothing like waking up and making a satisfying, tasty breakfast. In this post, I will share four delicious breakfast foods and how to make them to get the creative juices flowing! Whether you prefer sweet or savory in the morning, these flavorful recipes are sure to give you some ideas on what to make for breakfast. You can alter these recipes to fit your liking by using your favorite flour, sweetener, or an egg replacement.

My Double Chocolate Pancake Recipe:

1 cup flour

1 tbsp flax meal

1 tsp baking powder

2 tbsp sugar

¼ cup cocoa or cacao powder

1 cup milk

2 eggs

¼ cup of chocolate chips

Directions:

Mix dry and wet ingredients separately and then combine into one bowl. Fold in chocolate chips.

Heat a nonstick pan and put it on low to medium heat. Pour batter on the pan and cook on each side for about 3-5 minutes. Serves 1-2 people.

Simple Avocado Toast Recipe:

1 or 2 slices of your choice of bread (I’d recommend whole grain)

½ to one full avocado

1 tsp lemon juice

a pinch of salt, pepper, and chili flakes

optional: a pinch of sesame seeds

Directions:

Toast your bread while you prepare avocado mash. Mash the avocado and add lemon juice, salt, and pepper.

Mix and spread evenly onto your toast. Sprinkle chili flakes on top.

Pink Smoothie Bowl Recipe:

1-2 frozen bananas (depending on how sweet you want it)

1 cup frozen strawberries

1 cup frozen raspberries

1 tbsp honey or agave syrup your choice of toppings

Directions: Take all frozen ingredients and put them into a high speed blender or food processor. Add about a tablespoon or two of water and blend until it has no chunks.

Add the agave or honey and blend until well combined. Put in your favorite bowl and add toppings of your choice (fruit, granola, nuts, etc.)!

Asian Themed Salad Recipe:

1-2 eggs

half a sweet potato

1-3 cups of spinach or kale

half an avocado

1 mini cucumber

½ tsp olive oil

1 tbsp sesame oil

Your choice of seasoning

Directions: Chop up sweet potato and sautée it in the olive oil and add it to the spinach or kale. Fry the egg(s) and put on the sweet potato mixture.

Add cucumber and avocado slices and pour sesame oil on top.

You might be thinking, salad for breakfast?! Bleh. But remember, we should all aim to have at least 2 servings of greens per day, which is equal to two cups. Sesame oil is a staple in Asian households and contains zinc, iron, and magnesium that may help improve blood circulation and metabolism. These restorative properties in turn, help keep you radiating inside and out, and what better way to start the day?
