I made these absolutely delicious, soft, crumbly cookies for my daughter sans sugar, I substituted it with honey. She loved them, and it also goes well for us with our afternoon tea or coffee!
Ingredients: 1 cup of all purpose flour, 1/4 cup of butter, one egg, vanilla essence, 1 spoon of corn starch, 1 spoon of baking soda, 1/2 cup of roasted pistachios, 1/2 cup of honey. If you are adding sugar, then just use 1/4 cup of honey and 1/2 cup of brown sugar, 2 tablespoon of oil and a spoon of salt. This will give you 10 small cookies.
Recipe: in a mixer blend the pistachios, corn starch and salt. In a bowl mix the flour, baking soda, vanilla essence. In another bowl mix the wet ingredients and blend – egg, honey, sugar (if you are using) and oil. Slowly blend the dry ingredients with the wet ingredients, and add the pistachios powder. I empty the batter in a cling wrap and either store it in the fridge for 30 mins or then freezer for 10 mins.
Next make small balls with you hand and press down very lightly on a pan. Stick it in the oven for 12 mins or under lightly browned at 350 degrees. You can garnish this with powdered sugar if you like.
