This quick salmon dish packs a real punch with the use of balsamic and honey and a dash or three of whatever dried herbs you’ve got on hand. This is one of the easiest, quickest meals, and I’ll often make it when I’m feeling tired or just lacking the energy to cook an involved meal. It comes together in no time, requires NO CHOPPING, and it’s super easy to customize based on your favorite flavors/herbs . Stick some rice or quinoa in the rice cooker, steam or roast up your favorite vegetable, and you’ve got yourself a very easy, very satisfying and healthy dinner. My daughter, who is 3, has long been saying salmon is her favorite food, but I suspect she is specifically talking about THIS salmon. My 5 year old just came home from school and asked to have leftover salmon for his snack! It’s sweet, it’s salty, it’s kid friendly, it’s got it all.
Ingredients:
1 – 1 1/2 lb Salmon fillet
1/4 cup honey
1/8 cup balsamic vinegar
1/2 to 1 tsp each – dried herbs of your choice – think thyme, basil, rosemary, red pepper flakes, or whatever you like.
Salt & Pepper to taste
Method:
Preheat oven to 375F
In a small pot place honey, vinegar, dried herbs, salt and pepper. Gently heat over medium low heat, stirring until vinegar and honey are well combined. Remove from heat.
Place salmon filet on a foil lined sheet pan and sprinkle with salt and pepper.
Baste about half of the honey balsamic mixture onto the salmon and place in the oven. Set timer for 10 minutes.
After 10 minutes baste the remaining sauce onto the salmon and continue to bake for an additional 2-8 minutes. Total time will depend on thickness of the fish. If your piece is thin it might make sense to check for doneness around 12 minutes total, but likely the fish will take closer to 15-20 minutes total.
