This harissa marinated flank steak has the perfect balance of sweet, spicy, and salty. The harissa really takes the flavor up a notch and pairs beautifully with the lemon, herbs, garlic, spices, and honey. Once you’ve got flank steak marinated, it cooks together so fast, which is why I love flank steak. Don’t forget to slice against the grain to get really tender meat:)
Ingredients:
2 tablespoons olive oil
1/2 lemon, zested and juiced
2 tablespoons harissa
1 sprig each of thyme and rosemary, leaves finely chopped
4 garlic cloves, minced
1/2 teaspoon coriander
1/2 teaspoon cumin
1 teaspoon kosher salt
1 tablespoon honey
1 lb flank steak
Directions:
- Whisk together all the ingredients until smooth.
- Coat flank steak in the marinade and marinate in the fridge for 4-12 hours.
- Grill over medium high heat for 3-4 minutes per side, or until cooked to your preferred doneness.
- Allow to rest for 5 minutes before slicing against the grain and serving!
