Ingredients
For the batter
- 180 g all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 113 g melted butter
- 100 g sugar
- 2 eggs
- 3 tbsps honey
- 120 g yogurt
- 3 medium mashed bananas
For the caramelized banana slices
- 2 tbsps butter
- 1 large banana (sliced)
- A pinch of salt
- 2 tbsps honey
Preparation
- Preheat oven to 170°C. Place a baking paper inside a loaf pan.
- Whisk flour, baking soda and salt together in a bowl and set aside.
- Add the sugar to the melted butter. Beat in the eggs, whisk in the honey and yogurt, and mashed bananas until incorporated.
- Add the dry ingredients and whisk until smooth. Pour the batter into the loaf pan and set aside.
- For the caramelized banana slices, melt the butter and add sliced bananas. Cook until golden brown on one side then turn. Season with salt and add honey till everything is browned.
- Spoon half of the caramelized banana slices over the batter. Reserve the rest for serving
- Bake the banana bread for 55 minutes or until browned. Cool banana bread for 45 minutes
- Serve with caramelized banana slices and drizzle with honey and enjoy
Tips:
- Only use the ripest Bananas. This will make your bread even more strongly banana-flavored and richer.
- Wrap leftovers tightly in plastic wrap and store at room temperature for upto 3 days.
- You can also add your favorite nuts to this recipe.
