Ingredients:
- 5 lb lamb loin, trimmed and tied
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp olive oil
- Salt and black pepper, to taste
Instructions:
- Preheat your oven to 300°F.
- In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper.
- Rub the mixture all over the lamb loin, making sure to coat it evenly.
- Place the lamb loin on a roasting rack in a roasting pan.
- Roast the lamb loin in the preheated oven for about 90 minutes or until it reaches an internal temperature of 130°F for medium-rare, 140°F for medium, or 150°F for well-done.
- Remove the lamb loin from the oven and let it rest for 10 minutes before slicing.
- Serve the sliced lamb loin with your favorite sides and enjoy!
