Roasted Lamb Loin

Ingredients:

  • 5 lb lamb loin, trimmed and tied
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions:

  1. Preheat your oven to 300°F.
  2. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper.
  3. Rub the mixture all over the lamb loin, making sure to coat it evenly.
  4. Place the lamb loin on a roasting rack in a roasting pan.
  5. Roast the lamb loin in the preheated oven for about 90 minutes or until it reaches an internal temperature of 130°F for medium-rare, 140°F for medium, or 150°F for well-done.
  6. Remove the lamb loin from the oven and let it rest for 10 minutes before slicing.
  7. Serve the sliced lamb loin with your favorite sides and enjoy!
