Pumpkin Soup

Admin

This creamy and flavorful pumpkin soup is a delicious and easy-to-make recipe that is perfect for a cold day. It is made with simple ingredients that you probably already have on hand, and it is ready in just a few steps. The soup is perfect for a light lunch or a hearty snack. It is made with pumpkin puree, chicken or vegetable broth, salt, pepper, and heavy cream (optional). The soup is creamy and flavorful, with a hint of sweetness from the pumpkin.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can pumpkin puree
  • 4 cups chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the pumpkin puree, broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the pumpkin is tender.
  3. Puree the soup in a blender or food processor until smooth.
  4. If desired, stir in the heavy cream.
  5. Serve hot.

Tips:

  • For a richer flavor, use homemade chicken or vegetable broth.
  • If you don’t have heavy cream, you can use milk or half-and-half.
  • Garnish the soup with fresh herbs, such as parsley or thyme, or with a dollop of sour cream or yogurt.

Variations:

  • Add 1/2 cup of cooked rice or quinoa to the soup for a heartier meal.
  • For a spicier soup, add 1/2 teaspoon of cayenne pepper or chili powder.
  • For a sweeter soup, add 1/4 cup of maple syrup or honey.
