Pumpkin Soup


This creamy and flavorful pumpkin soup is a delicious and easy-to-make recipe that is perfect for a cold day.   • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can pumpkin puree
  • 4 cups chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream (optional)


  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the pumpkin puree, broth, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the pumpkin is tender.

  • If you don’t have heavy cream, you can use milk or half-and-half.
