Oats And Banana Pancakes with strawberry compote


Its raining strawberries, quite literally I have to say, the usually almost 110 Ruffiya strawberries is now down to 30.  (1 dollar is roughly 15 ruffiya) So you can imagine everyone is flocking to the market to get themselves a  punnet of strawberries.  Pancakes are also a big favorite in my home, but I usually make them during holidays or during the weekends.
This version of  pancakes are  much more healthier. I  was inspired after seeing Nigella's oat pancakes  on her latest series Simply Nigella.   I made my version  using my  trusted pancake batter mix from a previous post. The banana was  an extra addition just to get my little one to have bananas , he never seems to be able to finish his morning banana ,( some how its his Mumma who has to finish it for him.)
You can serve these pancakes with the strawberry compote recipe or  some honey or syrup and even some regular jam

Recipe : Oats And Banana Pancakes with Strawberry Compote  inspired by Nigella's Oat pancakes recipe from the series Simply Nigella

Makes 9-10 pancakes

1 cup oatmeal ( I used the Kellogs quick cooking Oats)
1 cup plain flour, sifted
2 tsp baking powder
2 tbsp sugar
pinch salt
2 small bananas or 1 large one
1  cup milk
1/2 tsp cinammon
1 tsp vanilla essence
2 eggs, beaten
butter for greasing

Strawberry Compote recipe adapted  from Just one cookbook
10 strawberries, quartered ( or use frozen ones)
3 tbsp sugar
1/2 cup water
juice of 1/2 lime
1 tsp corn flour

I just loved the way Nami from Just one cook book made her compote so I made mine following hers. Refer to  her page here for clear photoes of the recipes and more delicious recipes especially Japanese ones.
You can make the compote days ahead and keep in fridge in a clean glass jar, can be used on toast as well.( I like to serve it warm though.)  To make the compote,  place everything except the corn flour into a small saucepan and bring to a quick boil then simmer, with the lid on , till the fruit softens. Keep an eye on it though as it will soften pretty quickly and might catch at the bottom. Add a little more water if it looks too dry.

Mix the corn flour with about 2 tbsp of water and pour into the mixture and let it thicken. Remove pour into a bowl and let it cool, then add  into the cleaned dry bottle or jar and store in the fridge till needed.

Now for the pancakes,  Place the  oats into a dry spice grinder or food processor and grind till quite fine. Then pour this into a mixing bowl. Sift in the flour, sugar, cinnamon baking powder and pinch of salt. Mix .

Now in a measuring jug or a smaller bowl, mash the bananas and add the beaten eggs and milk and vanilla essence and mix well.  You just might need a table spoon or two of extra milk.

Pour the wet mixture into the bowl of dry mix and gently mix in , don't over mix.

Heat a non stick frying pan, brush with butter and add a ladle of batter, you might need to spread it out a bit. cook over a medium heat. Then once the bubbles starts to form on top flip it over and cook the other side, remove and repeat the same with the rest, brushing some butter on the pan each time.

Now serve the pancakes with the compote.  and some honey if you like! Enjoy!
