Either for breakfast or dessert, crepes are surely a crowd favorite. Just like pancakes, you can make them sweet or savory, depending on your liking. Ingredients:
- 2 eggs
- 1 1/2 cups of milk
- 1 teaspoon of canola or vegetable oil (or you can also use 1 tablespoon of melted butter)
- 1 cup of all-purpose flour
- 1/4 teaspoon of salt (or 1/2 teaspoon if you want it to be savory)
- 1 teaspoon of vanilla extract (for sweet crepes)
- 1 tablespoon of granulated sugar (for sweet)
Options for garnish (optional):
- Nutella
- strawberries
- banana (sliced)
- whip cream
- honey
- powdered sugar
Instructions:
Step 1:
In a small bowl or blender, add two eggs, one and a half cups of milk, and one teaspoon of canola oil. Blend well until just mixed.
Step 2:
Add one cup of all-purpose flour and half a teaspoon of salt. This will be the base batter of crepes. If you want it to be sweet, add one teaspoon of vanilla extract and one tablespoon of granulated sugar. Mix again until well combined and smooth. If there are still lumps, you can use a strainer to remove them.
Step 3:
Let it chill for about an hour in the refrigerator. It will allow the gluten to relax.
Step 4:
Place a non-stick skillet over medium to medium-high heat. Once it’s hot, take a little bit of butter and spread it evenly. Lift the pan and tilt it then pour 1/4 cup of the batter. Tilt it again until the bottom of the pan is well-coated. Put back into heat and let it cook for 1 to 1 1/2 minutes on each side. Once it’s dry on top, flip it over and cook the other side. Repeat for the remaining mixture. Stack in a plate.
Step 5:
Get one crepe and spread Nutella on top. You can fold it into quarters. For the strawberries, spread whip cream and add sliced strawberries on top, then roll it.
