Easy Peasy Honey Garlic Stir Fry

2-3 Boneless Skinless Chicken Breasts, sliced

Bag of Frozen Stir Fry Vegetables

1 small Onion, chopped

6 Garlic cloves, minced,

1 tsp minced ginger

1/4 cup Soy Sauce

2 Cups Chicken broth

1/2 cup each Honey & Brown Sugar

1 TBSP Cornstarch & 1/4 Cup Water

Slice and brown the chicken pieces, reserve aside. Meanwhile, mix broth, soy sauce, ginger, garlic, honey, brown sugar and simmer for about 5 minutes, add the cornstarch and water slurry and simmer an additional 5 minutes. Add some oil to your stir fry pan, add frozen veggies and chopped onion, cook for about 5 minutes, add chicken chunks back to pay, pour sauce over top and simmer together until veggies are tender-crisp. I served mine over basmati rice, cooked in my Pampered Chef Quick Cooker.
