Eat The Rainbow Detox Bowl

Where’s the yellow you ask? Well it’s in the lemon juice dressing of course… and blue well now that was too tricky :D

‘Eating the rainbow’ is a sure-fire way to making sure you’re getting a full range of nutrition from your food. The different colour pigments in different fruit and vegetables all have different protective qualities and benefits for health. These can be divided into 5 groups – red, orange/yellow, white/brown, green and blue/purple.

When you’re doing a detox since you’re cutting out certain foods, probably including meat then its extra important to make sure you’re getting a broad range of nutrition. For example the lemon and honey detox is quite popular but I wouldn’t recommend this because you wouldn’t be getting a good range of vitamins and minerals from this. Your body will be able to better repair itself as you detoxify if you get enough of all the good stuff.

I’ve used pumpkin seeds in this bowl because they are super cleansing – being the absolute most powerful parasite killing food out there according to Dr. Axe.

Some of the benefits of different coloured fruit & vegetables:

Red

Full of vitamin C, vitamin A, potassium and the antioxidants anthocyanins and carotenoids.

White/Brown

Full of vitamin C, good fo the heart and help to control cholesterol

Yellow/Orange

Loaded with vitamin C, vitamin A and potassium. Can boost the immune system and enhance vision.

Green

Lots of heart protective potassium and vitamin K which aids blood clotting processes. Good for maintaining vision health and strong bones & teeth. Dark leafy greens have the highest concentration of antioxidants and fibre.

Blue/Purple

Boosts unrinary tract health and memory function + promotes healthy ageing.

Ingredients:

A few handfuls of washed and chopped lettuce leaves

1/3 of a broccoli, chopped small

Half a punnet of cherry tomatoes

1 can of butter beans (or lima beans if on GAPS diet)

1/2 cup of walnuts

1/2 cup raw almonds

1/2 a small red cabbage

2 large carrots, grated wide

1/3 cup of pumpkin seeds

A handful of flaxseeds (optional)

FOR THE DRESSING

Juice of half a lemon

1 teaspoon of raw honey

1/4 cup extra virgin olive oil

Method:

  1. Throw all of the vegetables into a large bowl and toss with your hands until mixed evenly.
  2. In a cup stir together the lemon juice, olive oil and raw honey until the honey is dissolved.
  3. Pour the dressing over your veggies and toss again.
  4. Serve up into bowls and sprinkle the walnuts and almonds on top at the end.
