Ingredients
Celery ( / Serorh) 2 stalks (net weight 200 g)
Coarse salt (/ Arajio) 1/2 tsp
Raisins ( / Rhzun) 15 g
Miso ( / Miso) 50 g
Honey ( / Hachimitsu) 25 g
Resealable plastic bag ( / Hozonbukuro) 1
How to Make
1. Remove the strings from the celery. Cut the celery into chunks.
2. Put the celery chunks into the plastic bag, add the salt, and then use your hands to massage the bag to mix the contents well. Close the bag and set it aside for about 1 hour, then drain off the water.
3. Mix the miso and honey in a bowl and then add the mixture, and the raisins, to the plastic bag. Massage the bag to mix everything well. Place the bag into a refrigerator for about 30 minutes before eating. Your celery and honey miso-dzuke will keep for a week in a refrigerator.
