Caesar Salmon with Feta Cheese Recipe

My family isn’t to big on salmon, but that’s okay by me, because I AM. Not only is salmon something I’m trying to eat more of because it’s healthy, I also find it to be very savory and satisfying.

I recently made Creamed Salmon on Toast (because I’m already a fan of creamed eggs on toast!) and that took me right back to my childhood when my Grandma made it. I even got my husband to try it and he gave a thumbs up.

WHAT TO LOVE

  • Salmon fillets
  • Your favorite bottled Caesar dressing

HOW TO MAKE CAESAR SALMON IN A SKILLET

Remove the salmon fillets from the packaging and rinse under cool water; pat dry with paper towels and then season lightly with salt and pepper.

In a large skillet over medium heat, add a gentle swish of olive oil. When the oil is nicely hot, add the salmon portions, placing them flesh side down (or skin side up) into the skillet.

Let the salmon cook for 4-5 minutes or until golden brown, then turn the fillets so that the skin side is down against the bottom of the skillet.

Cook for 5-8 minutes until the salmon is done throughout and turns opaque in color. Salmon is done with it flakes easily at the thickest part when tested with a fork.

Drizzle the cooked salmon with the Caesar dressing, then top with the diced tomatoes and Feta cheese.

Remove the skillet from heat and cover; let rest for a few minutes, then serve at once.

CAN YOU EAT SALMON SKIN?

Technically, you CAN, but you don’t WANT to, trust me. It’s chewy and just not worth it, especially since the flesh of salmon is so rich, savory and delicious.

HOW DO YOU REMOVE SALMON SKIN?

Let the skillet and the cooking heat do that for you! Once the salmon has cooked on both sides (flesh-side first, then the skin-side) and is fully cooked throughout, slide a metal spatula right between the skin on the bottom of the salmon and the flesh of the salmon, then gently lift up.

Voila! The salmon flesh easily will remove itself right from the skin (leaving it behind in the skillet) when you use this technique. This is much easier than trying to skin a piece of raw salmon before you cook it.

HOW TO KNOW WHEN SALMON IS FULLY COOKED

Salmon cooks quickly and over-cooking dries it out into a tasteless heap. To prevent this, watch the salmon as it cooks. It will turn from deep red in color when raw to an opaque light pink color when fully cooked. You can almost watch the salmon turn from red to pink within a few minutes.

HOW TO TEST SALMON FOR DONENESS

I like to use the fork-tender test for salmon. Once the salmon has turned opaque light pink in color, it’s time to immediately test for doneness.

At the thickest part of the salmon fillet, insert a fork and gently turn/twist the fork a bit. If the flesh of the salmon begins to fall apart and give way to the pressure of the fork, your salon is DONE! Stop the cooking process immediately.

RECIPE TIPS

  • You can substitute frozen salmon fillets in this recipe – they work perfectly. Just be sure they are fully thawed before you begin.
  • If you find that your Caesar dressing is just a little too sweet for your liking, add a bit of red wine vinegar to the dressing before drizzling it over the salmon.
  • Be sure the oil in your skillet is nicely sizzling before you add the salmon – this creates delicious caramelization on both sides of the salmon for added flavor.
  • If you don’t have Roma tomatoes on hand, you can always dice up grape or cherry tomatoes – they work just fine.
  • No Feta cheese available? Substitute Parmesan or Romano – still absolutely delicious.
  • If you salmon fillets are skinless, no problem. Just reduce the cooking time by 1-2 minutes.
